This is a red velvet cake made in a WW2 era way, using beets for moisture and color. The trick to getting good color rather than mud is to keep the batter acidic: lemon and buttermilk and a complete lack of alkaline leavening are what make this

Sautee 8-10 button mushrooms in butter
Add 500g chopped cooked ham, heat through.
Cream sauce:
Melt a slab of butter, 200ml cream, and 150g cheddar cheese. Add a sprinkle of nutmeg and a sprinkle of assafroa.
Pour the two together over cooked parpardelle noodles.
Delicious.
