Specialization is vital in EVE online, and EVEMon helps you plan your skills to achieve the goal(s) that you set for your character(s) in a very easy way. Try out different career paths or discover what else your character could do with your current skillset...
Additionally, it is also a great offline reference containing information about many game elements like skills, ships, ship equipment etc. For this I even find it more useful than the ingame functions - it is much faster, and you can even let EVEMon show you what game elements are unlocked by a skill level.
I use it all the time - features like the skill completion notification are extremely useful, as I would have forgotten to start training a new skill X times already :) It definitely added a lot to my EVE experience.
